Title: Advances in the application of low intensity ultrasonic waves in characterizing the properties of soft hydrogenous biological systems
Abstract: 
In this presentation, I will present our recent results on using nondestructive ultrasonic techniques to assess and predict the quality of wheat-based products using ultrasound longitudinal ultrasonic waves operated at 50 kHz. The two main parameters, which will be employed include the ultrasonic velocity and attenuation coefficients, which will be calculated from the ultrasonic profile using advanced signal processing technique. The latter is based on careful calculations of the transit time and amplitude changes of the ultrasonic signal as it traverse the investigated material. Mechanical properties of the material were calculated used established model for soft materials. In addition, results were correlated to other methods, which rely on destructive qualitative approaches. Our results allowed the characterization and assessment of the quality of the wheat-based samples based on the quality and content of proteins in the sample. Excellent agreement with other tests were found, which clearly support the implementation of ultrasound parameters are sensitive to changes in the sample structure and constituents, and therefore can be used as a tool that can be used to assess the quality of these samples.
